Roast Pork with Rekorderlig Cider

So recently I attempted to cook my first ever roast pork with crackling!  I came across a gorgeous recipe online and thought I'd share it with you all... so here goes:

Roast Pork with Rekorderlig Cider

Yummy Ingredients:
    2.3kg boneless pork leg roast
    2 tablespoons olive oil
1 tablespoon Saxa sea salt flakes
    500g eschalots, peeled
    300ml Rekorderlig apple cider
    1 hold garlic blub, separated
1/4 cup water with 1/2 cube chicken stock
    1 teaspoon fennel seeds
Roast veggies of your choice to serve

1. Preheat oven to 240°C. Pat pork rind dry with paper towel. Using a sharp knife, score rind. Place pork in a large, flameproof baking dish. Rub all over with oil, then salt. Roast for 25-35 minutes or until rind is golden and crackled.

2. Reduce oven temperature to 180°C/160°C fan-forced. Place eschalots and whole garlic cloves around pork and sprinkle fennel seeds around. Add cider and stock.  Season with pepper.  Roast, covered, for 2 hours 30 minutes **. Remove cover. Roast for 20 to 30 minutes **

3. Transfer pork, eschalots and apples to a plate. Cover loosely with foil. Place baking dish with pan juices over high heat. Bring to the boil. Reduce heat to medium. Simmer for 5 minutes or until sauce thickens slightly. Slice pork. Serve with roast veggies, eschalots, garlic and sauce.

**Cooking times vary depending on the size of your pork.  The general rule is bake in very hot oven as in step 1, then bake for 30 minutes for every 500 grams

Enjoy!

My favourite book right now!

I recently ordered this book online through this fabulous and very competitive book store.... www.fishpond.com.au.  Their prices are the lowest by far of any of the online book stores, beating The Nile, Angus and Robertson, The Book Depository etc etc.  They also offer free postage for all orders!  My book took about 10 days to arrive.

When my book arrived I was in crafty heaven!  I read Kelly's blog regularly (see it here) and couldn't wait to get my hands on this creative book.  With ideas for sewing new projects such as satchels, baby slings, zippered purses, beach bags and a kids tea-pee (to name a few), she also includes fabulous recycled ideas such as using old woolen jumpers and turning them into sewn blankets and scarves, hot water bottle covers, socks and mittens.  There are also crafty ideas things such as kids projects, broaches and wrapping paper.

The instructions at times can be a little hard to get my head around (I'm more of a tutorial girl, rather than written instructions), but once I'd read each design step by step (a few times), I could understand what I needed to do.

She also includes information on the basics of sewing including a glossary and terms.

This book is well worth the money and I highly recommend it!

Melbourne Craft Markets Listing

Today I was looking around at art and craft markets in Melbourne and I came across this fabulous website (some bits seem a bit out of date thought);  The White Hat Guide to Melbourne Markets.  It features regular arts, crafts, vintage and farmers markets, it also lists the known defunct markets (handy!).

I thought this market (The Handmade Show) was interesting and wondered if anyone had exhibited at it before?

I'm back... and with a new sewing machine!

Hi Everyone!

It certainly has been a long time since I've been on here :( whoops, I guess sometimes life keeps you from doing the things you love!

On some good news, it was my birthday a few weeks ago and guess what I got for a present?? YES a sewing machine!  I'm sew excited (get it!? hehe), I've been trying to sew every few days and have been brushing up on my skills as it's been years since I've even looked at a sewing machine.

I was lucky enough to receive a Singer 1507, looks like this:  It's a basic model, but it has about 15 stitches and 4 step button hole, very simple and easy to use.

I'm embarking on a few new sewing projects so I'll post them up here as I go.  Please don't forget to comment.

Until next time...
